Ready-meals pre-calibrated application
Quick measurement of ready-meals quality parameters
NIRFlex N-500 with Solids Cell, NIRMaster, B-400 Mixer
Moisture, Fat, Protein, Ash and Salt measured by Near Infrared Spectroscopy
1. Introduction
4. Performances
The fast determination of critical parameters of readymeals such as moisture and macronutrients content is
prerequisite to achieving optimal manufacturing
efficiency and final product quality.
The predictions guaranteed by BUCHI pre-calibrations
are summarized by the following table.
With the state-of-the-art FT-NIR spectrometer these
parameters
can
be
measured
rapidly
and
simultaneously, with minimal sample preparation, and
with accuracy comparable to laboratory reference
methods.
Table 1: Summary of parmeters available in the pre-calibrated
application
2. Samples
The pre-calibrated application is suitable to analyse
ready-meals products like:
•
•
•
Ready-made food (e.g. frozen pizza)
Misture of meat, pasta and vegetables
Ready-noodles
Parameter
Range
Moisture [%]
29.30 – 87.40
Fat [%]
0.29 – 29.08
Protein [%]
2.12 – 24.59
Ash [%]
0.5 – 4.2
Salt [%]
0.3 – 3.1
5. References
Inclusion of hundreds of samples spanning several
European Countries within each pre-calibration has
resulted in robust calibrations with broad applicability.

For more detailed information please contact your local
BUCHI representative or explore the “Application”
section at www.buchi.com.
.
Each sample is scanned in triplicate at ambient temperature
3.2 Measurement principle: diffuse reflectance
3.3 Sample preparation: using BUCHI Mixer B-400, homogenize
the sample until it reaches uniform consistency. Then transfer the
homogenized product to the sample cup until the fill is
approximately 1-cm or greater.
