1 Scorfano marinato, di circa 900 gr
PEPERONI
½ Peperone rosso
½ Peperone giallo
3 Spicchi aglio
Olio extra vergine di oliva
ZUCCHINA
1 Zucchina
1 Spicchio aglio
Peperoncino
80 ml Fondo di pesce
100 ml Vino bianco
Olio extra vergine di oliva
SCORPION FISH
900 gr Marinated scorpion fish
PEPPERS
½ Red pepper
½ Yellow pepper
3 Cloves Garlic
Extra virgin olive oil
PASTA
320 gr Spaghetti De Cecco, num 512
ZUCCHINI
1 Zucchina
1 Clove Garlic
Chilli pepper
80 ml Fish reduction
100 ml White wine
Extra virgin olive oil
PASTA
320 gr Spaghetti
LAVORAZIONE
METHOD
SCORFANO: sfilettare e pulire lo scorfano, diliscarlo, rimuovere eventuali spine
residue on l’aiuto di una pinzetta. Tagliare la polpa a striscioline spesse circa mezzo
centimetro.
SCORPION FISH: clean the scorpion fish, remove the bones and fillet it. Cut the
flesh into strips about half a centimetre thick.
PEPERONI: ungere i peperoni con poco olio extra vergine di oliva, sistemarli in
una teglia, unire 3 spicchi di aglio e cuocerli in forno a 200- 220°C finché non
saranno coloriti (10 - 15 minuti). Pelarli ancora caldi, dividerli a falde, eliminare i
semi e tagliarli a striscioline.
ZUCCHINA: tagliare la zucchina a julienne e farla saltare in padella con poco olio
extra vergine di oliva, lo spicchio d’aglio rimasto e una punta di peperoncino tritato.
Bagnare con il vino bianco, lasciare evaporare, ripetere con il fondo di pesce e
aggiungere le striscioline di scorfano e i peperoni. Cuocere per un paio di minuti a
fiamma vivace in modo che il fondo di cottura risulti legato.
PREPARAZIONE DEL PIATTO
Cuocere gli spaghetti in abbondante acqua salata, scolarli, saltarli nel condimento
preparato e suddividerli nei piatti.
PEPPERS: grease the peppers with a little extra virgin olive oil, place them in a
baking tray, add 3 cloves of garlic and cook in oven at 200-220° C until they are
brown (10-15 minutes). Peel them still hot, remove seeds and cut them into strips.
ZUCCHINI: cut the zucchini a julienne and stir-fry in pan with a little extra virgin
olive oil, garlic and a little chopped red pepper. Sprinkle with white wine, let
it evaporate, repeat with the fish reduction, add the strips of scorpion fish and
peppers. Cook for 2 minutes on high flame so that the gravy appears bound.
Adjust salt.
HOW TO PREPARE
Cook the spaghetti al dente in salted water, drain and stir-fry in the sauce.
Serve the spaghetti into dishes.

THE JUBILEE OF MERCY 2016 AND THE ROME CAVALIERI
Il 13 marzo 2015 Papa Francesco annunciò la celebrazione
di un Anno Santo straordinario con dieci anni di anticipo: un
evento storico, dopo soli 15 anni dal Grande Giubileo dell’anno
2000 indetto da Papa Giovanni Paolo II. Questo Giubileo della
Misericordia ha avuto inizio con l’apertura della Porta Santa in San
Pietro nella solennità dell’Immacolata Concezione e si concluderà
il 20 novembre 2016.
On March 13, 2015 Pope Francis announced an extraordinary
Holy Year with ten years in advance: a historic event, fifteen years
after the Great Jubilee of 2000 proclaimed by St. John Paul II. This
Jubilee of Mercy commenced with the opening of the Holy Door
in St. Peter’s on December 8, 2015 (Solemnity of the Immaculate
Conception) and will conclude on November 20, 2016.
Il rito iniziale del Giubileo è l’apertura della Porta Santa: si tratta
di una porta che viene aperta solo durante l’Anno Santo, mentre
negli altri anni rimane murata. Hanno una Porta Santa le quattro

Traditionally, the Pope himself opens and closes the doors of St.
Peter’s Basilica personally, and designates a cardinal to open those

which are the four highest-ranking Roman Catholic churches,

Il clivio su cui si erge è situato lungo una delle vie più importanti
della storia dell’umanità, che da Canterbury porta a Roma: la Via
Francigena. È un itinerario storico, una via maestra percorsa in
passato da migliaia di pellegrini in viaggio verso la Città Eterna. Il
pellegrino non si muoveva mai da solo, e queste vie erano vere e
proprie arterie di intensi scambi e commerci, che venivano anche
percorse dagli eserciti nei loro spostamenti.
Arrivati alle porte di Roma, i viaggiatori erano soliti riposare
sulla collina di Monte Mario: per tale ragione la zona era anche
comunemente detta “dei cavalieri”, perché erano soprattutto i
viaggiatori a cavallo a sostare, per far riposare e rifocillare i cavalli,
e ritemprare se stessi prima dell’arrivo a San Pietro.
The Rome Cavalieri is situated in an area of great historical interest.
Perched atop the hill of Monte Mario, which dominates the city of
Rome, the hotel lies alongside one of the most important paths in
the history of mankind: the Via Francigena, the pilgrims’ route from
Canterbury in England, through France and Italy, all the way to
Rome. It is a journey through history itself. Pilgrims always travelled
in groups and this was one of those roads teeming with merchants:
a hive of buying, selling and bartering. Armies marched along the
road from one post to the next. Once they arrived at the walls of the
Eternal City, travellers used to rest on the hill of Monte Mario and it
is for this reason that the area was also commonly called “the riders’
place”, as it was usually travellers on horseback who would stop, to
rest both themselves and their mounts.
