LAVORAZIONE
METHOD
GELATINA DI MELOGRANO
Tagliare i melograni a metà e spremerne il succo. Scaldare 50 ml del succo di melograno,
aggiungere lo zucchero e la gelatina precedentemente ammorbidita in acqua fredda. Unire altri
150 ml di succo. Filtrare e distribuire su 4 piatti fondi. Riporre in frigo per circa 2 ore. Il succo
rimasto verrà utilizzato per la granita.
POMEGRANATE JELLY
Cut the pomegranates in half and extract the juice. Warm up 50 ml of the liquid; add sugar and
gelatine previously soaked in cold water. Mix with 150 ml of juice, filter and pour on 4 dessert plates.
Cool in the fridge for two hours. Keep the remaining juice apart to use later.
SALSA ALLA VANIGLIA
Unire la panna, i tuorli, lo zucchero e la bacca di vaniglia. Portare il tutto a 80°C ed incorporare la
gelatina precedentemente ammorbidita in acqua fredda. Filtrare e fare raffreddare.
GRANITA DI MELOGRANO
Scaldare 50 ml del succo di melograno, sciogliervi lo zucchero e la gelatina precedentemente
ammorbidita in acqua fredda. Unire la parte rimanente del succo. Filtrare, congelare e ridurre in
granita.
CARAMELLO AI PINOLI SALATI
Portare l’acqua e lo zucchero ad ebollizione. Versare i pinoli precedentemente tostati, il sale e
caramellare. Versare su un foglio di carta da forno e fare raffreddare. Ridurre in granelli.
GELATO AI PINOLI SALATI
Amalgamare i tuorli con lo zucchero. Portare ad ebollizione il latte, la panna ed unire al composto.
Lavorare con una frusta a bagnomaria fino ad ottenere una crema inglese. Fare raffreddare,
aggiungere il caramello ai pinoli salati e mantecare in una gelatiera (se non si possiede una macchina
per il gelato, si può sostituire con del gelato alla vaniglia e spolverizzarlo di caramello ai pinoli salati).
PREPARAZIONE
Formare delle piccole punte di salsa alla vaniglia sui piatti fondi contenenti la gelatina di melograno
(non più di 10 gr a persona). Aggiungere qualche chicco di melograno e versare al centro un
cucchiaio di granita. Adagiarvi sopra un cucchiaio di gelato ai pinoli (circa 30 gr a persona).
Guarnire con i fiori eduli.
VANILLA SAUCE
Mix the cream, the yolks, the sugar and the vanilla bean. Bring the mixture to 80°C then add the
isinglass previously soaked in cold water. Filter and allow it to cool.
POMEGRANATE ICE CRUSH
Warm 50 ml of the pomegranate juice, melting the sugar in it and the isinglass previously soaked in
cold water. Add the remaining juice. Filter, freeze and grate with a fork to create the ice crush.
SALTED PINE SEEDS CARAMEL
Mix water, sugar and bring it to a boil. Mix the pine nuts previously toasted with the salt and
caramelise. Spread on a baking paper and let it cool down. Crumble in small grains.
SALTED PINE SEEDS ICE CREAM
Blend the yolks with the sugar. Mix the milk with the cream, bring them to a boil and add to the
mixture. Use the bain-marie whisk to create a crème anglaise. Let it cool, add the salted pine nuts
caramel and pour into an ice-cream machine. (If you do not have an ice-cream freezer, you can use
vanilla ice cream instead and sprinkle it with salted caramel pine nuts).
HOW TO PREPARE
Draw some vanilla drops over the pomegranate jelly (no more than 10 gr per person). Add some
pomegranate seeds and pour a spoon of pomegranate ice crush in the middle. Garnish with a
quenelle of pine nuts ice cream (about 30 gr per person) and complete the dish with edible flowers.

Rome Cavalieri e ci ha concesso un po’ del suo prezioso tempo
per parlarci del suo amore per la Città Eterna e dei suoi progetti
filantropici.
Tennis great Novak Djokovic has recently stayed at Rome Cavalieri
and took some time in his busy schedule to talk to us about his love
for Rome and his philanthropic work.
Quando viaggia, che cosa apprezza maggiormente quando soggiorna in albergo? Che
cosa le piace di più del Rome Cavalieri?
Il Rome Cavalieri è uno dei miei posti preferiti quando mi trovo lontano da casa. La
vista dalla mia camera, sulla Città Eterna, era mozzafiato, circondata da uno splendido
paesaggio verde. Apprezzo gli ambienti tranquilli e sereni. In più, le strutture sportive del
Rome Cavalieri sono fantastiche... e il cibo non è da meno!
What do you value most when travelling and staying at hotels, and what do you love most
at Rome Cavalieri?
Rome Cavalieri is one of my favourite places away from home. My view from the hotel room
was breathtaking, overlooking the Eternal City and with a very green landscape. I enjoy
peaceful and serene environments. Also, the sports facilities at Rome Cavalieri are great…
and the food is incredible too!

I like being myself all the time, not just now.

Ho percepito tanto affetto ed energia positiva dal pubblico che assisteva al torneo. Roma
è una città davvero speciale e sono contento di esser tornato... tutte le strade portano a
Roma, e di questo luogo conservo ricordi bellissimi.
What are you impressions after the Rome Masters?
I received a lot of love and positive energy from the audience who were watching the
tournament. Rome is such a special city and I am always excited to come back… tutte le
strade portano a Roma. I always have the best memories from Rome.
Oltre al tennis, quali sono le sue passioni?
Uno stile di vita sano, una buona alimentazione, e soprattutto aiutare i bambini a realizzare
i loro sogni tramite la mia fondazione. Mi piace trovare un modo per migliorare la mia vita
rispettando la natura e gli altri, e provo a trasmettere questo messaggio ai più piccoli ogni
volta che ne ho l’opportunità.
What are your major passions in your life apart from tennis?
I am passionate about leading a healthy and nutritional lifestyle and helping children achieve
their dreams through my foundation. I enjoy looking for ways to improve my life by respecting
nature and others and I try to send the same message to the children whenever I have a
chance.
Che cosa rappresenta la Fondazione Novak Djokovic?
Ha lo scopo di supportare i bambini nel realizzare i loro sogni, incoraggiandoli ad avere
grandi obiettivi e a lavorare duro per raggiungerli. Per la maggior parte delle persone, il
mio sogno di voler diventare il migliore giocatore di tennis al mondo era irrealizzabile.
Grazie all’immenso sopporto della mia famiglia, è accaduto, e per questo ho deciso di

What does the Novak Djokovic Foundation stand for?
It stands for helping children achieve their dreams and encouraging them to dream big and
work hard to get there. I had the big dream to become the best tennis player in the world,
which seemed unrealistic to many people around me. With the support of my family, I achieved
that dream and decided to help other children succeed. Many are discouraged even before
they start dreaming about doing something great with their lives. I really strongly believe that
people can do anything they want, as long as they passionately dedicate themselves to it. For

Di recente è diventato papà di Stefan. Come lei e sua moglie Jelena pensate di insegnare

Esattamente. I miei genitori e i genitori di Jelena ci hanno sempre insegnato quanto è
importante aiutare gli altri, e abbiamo l’intenzione di fare lo stesso con il nostro bambino.

Absolutely. Jelena and I were taught by our parents the importance of helping others, and we
plan to do the same with our child.
Come possiamo aiutare coloro che non hanno accesso alle opportunità?
Dare non vuole dire soltanto fornire denaro. Ho visto tanti esempi di persone che sono
grate per il solo fatto di aver parlato con qualcuno e di aver imparato dall’esperienza
di questa persona. Forse mi sbaglio, però credo davvero che non possiamo avere delle
opportunità se non le cerchiamo. Il mondo ne è pieno e la responsabilità di coglierle è
tutta nostra.
Qual è il suo posto preferito a Roma? Ha avuto un po’ di tempo per fare un giro turistico?
Sono riuscito a fare un rapido giro con mio fratello. Roma è sempre movimentata,
affascinante e piena di allegria! Adoro il Colosseo e camminare nella zona del Pantheon.
Dopo raccolte di fondi di grandissimo successo a Londra e New York, state
programmando eventi di beneficenza a Roma? Ci piacerebbe ospitarli al Rome Cavalieri!
Abbiamo organizzato eventi di grande successo a New York e a Londra, dove sono stati
raccolti oltre 5 milioni di dollari per i bambini della Serbia. Di sicuro anche Roma sarebbe
un luogo perfetto per eventi simili, e magari nel futuro porteremo qui la Fondazione Gala
Novak Djokovic. Sarebbe meraviglioso, ne sono convinto!
You recently had a baby boy, Stefan, how do you and your wife, Jelena plan on teaching your
How can we give others who do not have access to opportunities?
Giving is not just about providing financial means. I have seen so many examples of people
being grateful for just having somebody to talk to and to learn from that person’s experience.
I could be wrong, but I really believe that we will not have access to opportunities if we don’t
look for them. The world is full of opportunities and it is our fault if we miss out on them.
What is your favourite historical place in Rome, did you have some time for sightseeing?
I had a chance to have a quick walk with my brother through the city. Rome is always so busy,
fascinating and full of excitement! I especially enjoyed the Colosseum and walking through
the Pantheon.
After very successful fundraisers in London and New York, are you planning any charity
events in Rome? We would love to have you here!
We had very successful events in New York and London where we raised over $5million
for children of Serbia. I am sure that Rome would be also a great location for a fundraising
event, and maybe in the future we can bring Novak Djokovic Foundation Gala here. It would
be wonderful I am sure of that!
