MONFERRATO DOLCETTO D.O.C. SANPIETRO VARIETY Dolcetto. VINEYARD “Braglia” estate vineyard in Canelli. Excellent South/South-East exposure. Hand harvested by mid September. Grapes from environment friendly agriculture, as per CE regulation no. 1257/99 VINIFICATION The importance of a quick crushing is essential in order to preserve its characteristics of freshness and vinousity. Traditional skin-contact fermentation for 12-14 days in stailess steel tanks at temperature controlled. Full malolacticis very important for the roundness of this wine. The wine is bottled without filtration and, after a few months in our cellars, it is ready to be tasted at its best. ORGANOLEPTIC FEATURES Colour: Ruby red with purple reflections. Perfume: Vinous, fresh, harmonious, with fruit scents and underbrush notes. Taste : Dry and tasty with a delicate almond nuance. Elegant finish rich in sweet tannins. Thanks to its excellent structure this wine can be well appreciated after only a year of ageing, but it keeps its characteristics intactafter several years. GATRONOMIC PAIRINGS It is perfect with vegetable and meat hors-d’oeuvres, delicate pasta, white and red meat, steamed or roasted fish, medium and strong seasoned cheese.
