Six Teams of students have worked together to research and develop a cupcake recipe that is not only delicious, but also contains multiple superfoods! Their goal? To create the most delectable food-on-astick. They have tested and refined their recipe, using at least one locally sourced ingredient to compete against one another in our Food Truck Inspired Culinary Clash! This year we have divided our competition into two categories: sweet and savory. Smoove King’s Cake Executive Chef: Rysean Grant Sous Chef: Jeff Nguyen Cupcake Description: Strawberry Banana smoothies are an all-time favorite when it comes to being healthy. But what if you could transform that drink into a cupcake. Our Smoovee King cupcake is a soft and fluffy cake made with fresh bananas, topped with a sweet cream cheese frosting, mixed with chopped strawberries and Greek yogurt. Superfoodness: The health benefits gained from these ingredients are potassium, magnesium, and fiber (found in bananas), protein and probiotics (in Greek yogurt), and antioxidants as well as multiple vitamins and minerals are found in strawberries. Enjoy the flavors of a creamy strawberry banana smoothie in every bite. Tropical Paradise Executive Chef: Tia Taliwaku Sous Chef: Jacob Ton Cupcake Description: This cupcake is composed of a pleasant strawberries with a super sweet mango filling, and topped off with a lemony avocado frosting. Superfoodness: This wonderfully fruity looking cupcake is rich in Vitamins C, E, K, and other healthy vitamins thanks to its three main super food ingredients; mangoes, strawberries, and avocados. Not only does this cupcake decrease the risk of heart disease and diabetes but it also tastes great and will bring your taste buds to sweet, sweet heaven. A special thanks to our judges from the community for coming out and supporting our students! Not only are they here as judges, but they have come to Paint Branch to mentor student chefs. And a very special thanks to Chef Tiffany Taylor, for her hard-work and dedication in inspiring and teaching our student chefs! Ooh-lala Cinnamon Executive Chef: Marley Kamara Sous Chef: Carleen Walker Cupcake Description: These warm baked vanilla cupcakes have a cinnamon roll stuffed inside with a twist of cinnamon, brown sugar, and chopped fresh apples. A roasted pecan and walnut, sea salt caramel, and white chocolate cluster sits atop traditional cream cheese icing. “Superfoodness:” The superfoods utilized in this cupcake are apples giving you vitamin C which helps protects cells and lower the chances of getting chronic diseases. Pecans and walnuts have vitamin E which is necessary for a healthy heart. Cinnamon is anti-inflammatory, lowers cholesterol, improves cognition, and provides calcium, magnesium, and fiber. These benefits help this guilty treat become a little more innocent with every bite. Mini Loaf Executive Chef: Ananya Green Sous Chef: Jacob Ton Southern Vibes Cupcake Description: The Mini Loaf is a juicy and flavorful meatloaf that is stuffed with cheddar cheese, topped with light and fluffy mashed potatoes, and drizzled with gravy. Superfoodness: In this yummy savory “cupcake” there are 3 different superfoods: green bell peppers, onion, and yogurt. Green bell peppers are low in calories and contains zero grams of fat. It provides the body with fiber and Vitamins C and E. The onion helps build strong bones and fight against different types of cancers. Lastly, yogurt is a huge help in weight loss and rapidly shedding fat. It improves digestion due to being loaded with probiotics, which aids in a healthy digestive system and decreasing the risks of Colon Cancer. Executive Chef: Selah Schuppius Sous Chef: Rebecca Roberts Thanksgiving in a Cup Cupcake Description: Have a southern dinner right in front of your eyes including three super foods that offer satisfying health benefits. In our savory cupcake, corn, kale, and cauliflower are all incorporated balancing each other out. Our moist sweet corn muffin is topped with a creamy garlic cauliflower mash, crispy chicken strip, and a piece of fresh kale. It is then lightly drizzled with gravy. Superfoodness: Cauliflower and kale help fight cancer and have antiinflammatory, digestive benefits because they are rich in dietary fiber. Corn provides protection for your eyes and skin from UV damage. This is our twist on the popular southern dish of fried chicken, cornbread, mashed potatoes, and collard greens. Executive Chef: Bruce Lewis Jr. Sous Chef: Deyanie Robertson Cupcake Description: Thanksgiving is a holiday where families come together to eat an abundance of different dishes all on one plate. We were inspired to create a cupcake based on what to do with the leftover items. Our cupcake consists of freshly pulled chicken surrounded by homemade stuffing, topped with mashed potato and drizzled with cranberry sauce. Superfoodness: The super foods that help strengthen this dish are celery, cranberries, and potatoes. Celery and cranberries are packed with vitamins A, K, and C, while potatoes have fiber, potassium, and Vitamin B6.
